Select the right yeast

You have three choices while choosing the right yeast for your bread. Choose between, fast-acting dried yeast, the fresh yeast or active dried, depending on your recipe. While most industrial bread machines work best with fast-acting dried yeast, they are pretty effective for home baking endeavors too. You should also store the yeast properly and at the right temperature conditions to make them work best. If you use fresh yeast, you should use them within 2-3 weeks, as they last only that long.

Use the salt carefully

Prevent using excess salt in the bread, as it only raises blood pressure levels but also meddles with the function of the yeast. Use it in the right quantity and avoid adding salt near the yeast. The best way to ensure that you don’t put excess salt is by using lower measurements than what’s mentioned in the recipe.

Avoid rolling cold dough

If you have kept the dough in the fridge, make sure you don’t roll it immediately after you take it out. Instead, take it out at least 15-20 minutes before you start rolling it. This will prevent leaks, craggy edges, and cracks on the dough.

Add vitamin C

Vitamin C increases the strength of the gluten in the flour and helps the dough rise faster. If you’re making wholemeal bread, this is an amazing way to ensure that the dough rises properly. However, refrain from adding Vitamin C if you’re making the dough by hand. In other cases, you can crush a Vitamin C tablet and add the mix to the dough.

Never over-prove

Although it takes time for the dough to rise, you should never over-prove it and keep it in the oven for longer than 1.5 hours. That may cause the dough to shrink again, and the CO2 from the yeast may dissipate making all your efforts go in vain.
